Beetroot has been linked in studies to increased blood flow and decreased blood pressure & reduction in inflammation. So, finding a beetroot recipe was key to the thoughts behind looking for beetroot nutrition! This is particularly due to its high level of antioxidants (primarily Betalain pigments). So, this is a good example of a dish that will help you to RECOVER well from STRESS caused by exercise. Using Courgetti will increase your fibre content for less calories. If you’re looking to BULK out your meals you can add in some extra calories by having it with some whole wheat or edamame spaghetti.
This beetroot recipe has been inspired by @chef_jonnymarsh, who cooks for many high profile footballers including, Kevin De Bruyne, John Terry and Paul Pogba. As a result of watching him create this dish we decided if it’s good enough for them, it’s defnitely good enough for you!!
BEETROOT & COURGETTI CARBONARA
*2-3 tablespoons of concentrated beetroot juice
*1 large clove of garlic
*1 large courgette spirilised
*3 egg yolks
*1 tablespoon of grated parmesan cheese
*5 rashers of bacon
*a small handful of thyme
*Turn on the grill to warm it up
*crush your garlic (crushing your garlic and leaving for approx 15 minutes will trigger an enzyme reaction boosting healthy compounds)?
*cook your courgetti either in a microwave for about 2 minutes (covered loosely) or warm through in a pan for a few minutes
*stir in the beetroot juice to taste
*Now, cover your grill pan with some foil, place your rashers on the pan and cook until crispy and then dice *place bacon, thyme and garlic into a blender and blend to a crumb like texture, not a puree (this doesn’t take long) *warm through the mixture in a pan until the garlic is cooked *whisk the parmesan and the egg yolks *warm all the ingredients through in a pan, coating the courgetti thoroughly
